Guisadong Ampalaya

I can't believe I am posting a bitter gourd recipe, but it has plenty of health benefits. Half cooked vegetables are more healthier than fully cooked vegetables. Green balsam pear bitter melon they are not intensely bitter and you don't have to soaked in salt water for that long. This bitter vegetable is believed to have medicinal properties and remedy or anti-diabetic vegetable dish to lower the blood sugar level. Bitter melon not only good for those diabetic people. It said and has been proven on on several occasions to treat a number of illnesses such as hepatitis, cholera, liver problems, eye problem and etc. It purifies and improves blood circulation. It has more calcium than spinach, it is richer than most vegetables in the garden.
Ingredients:
545g or 1pcs green balsam pear of Chinese bitter gourd
5 garlic cloves, finely chopped or you can used garlic press for more intensive flavour.
1 medium red onion, sliced
2 medium red tomatoes, sliced
1 pork tenderloin,cut into strip
2 egg, beaten
2 tbsp fish sauce
3 tbsp grapeseed oil, or any cooking oil except olive oil
pinch of salt,
msg as necessary
Preparation:
1. Sliced the melon in half, scooped out the seeds, then cut into thin slices. Place the ampalaya in a large bowl, then soak in the water with pinch of salt and leave for 5-10 minutes, then drain any left over water.
2. Heat 3 tablespoon oil in a preheated wok. When the oil is hot, add the sliced pork and stir-fry for a minute, until the pork turns brown and is nearly cooked. Add the garlic for a minutes then add the onion follow by fish sauce and stir until aromatic. Then add the tomatoes, stirring to mix everything together.
3. Add the melon then stir for a seconds with the other ingredients. Pour the beaten eggs over the ampalaya then cover and simmer for 5 minutes or until the eggs cook partially. After 5 minutes open the lid, season again with a dash of msg if you desired and stir. Then serve as a main meal with steaming rice, again do not over cooked your melon also you can season with ground black pepper, if you like. You don't need to add water and keeps the nutritional value of the vegetable intact.
