Classic Pampanga Style Maja Blanca

The most simplest, delicious and easy way to make dessert. Maja Blanca or it was called as tibok-tibok in Capampangan is Filipino's favorites sweet delicacies. To make this dessert you may use either fresh coconut milk or canned coconut milk.
Ingredients:
1½ cup cornstarch
½ cup sweet corn kernel
¼ cup sugar
¼ cup condensed milk
3 cups coconut milk
1 cup sweet corn kernel
1 tbsp pandan extract
toasted coconut
Preparation:
1. Ground the 1 cup corn whole kernel in a blender. Sieve well to remove any corn skins pieces from the mixture. You’ll need to use a spoon to press it through the sieve, discard the corn skins.
a saucepan, combine the sieved ground corn with coconut milk, sugar, condensed milk, pandan extract and ½ cup sweet corn kernel. Cook over med-low heat until thickened a custard has formed, stirring constantly.
3. Brush a light layer of coconut oil on the banana leaves or mold pan. Pour on the greased pan and let it cool before cutting into servings and top with latik. Make serving for 4-6 persons.
