Stir-Fry Beef With Basil And Tomatoes

To make this dish is take less than a minutes to prepare. This Thai style stir- fry minced or ground beef it is made with searingly hot chillies. I added some red curry paste and palm sugar that complements the aromatic flavor of basil leaves and slight tangy, sweetness of the dish. This dish goes perfect with rice, I actually love this dish as well!
Ingredients:
650g ground beef
20 pcs red cherry tomatoes, cut into halves
1 tbsp minced garlic
20g chopped spring onion
1 tbsp palm sugar
2 tbsp soy sauce (optional) oyster sauce
1½ red curry paste
1 tbsp lime juice
½ tbsp sesame oil
2 tbsp fish sauce
2 tbsp vegetable oil
½ tsp corn starch mix in 2 tbsp water
2 red chillies, seeded and sliced finely lengthwise
1 or more handful of fresh basil leaves
Methods:
1. Mix the palm sugar, red curry paste, soy sauce, lime juice, sesame oil, fish sauce and stir, set aside.
1. Heat oil in a large wok or frying pan over medium heat. Stir fry the garlic until fragrant. Then add the spring onion and stir for a seconds, add the meat and stir fry for 2 minutes or until the meat is almost cooked.
3. Add the chillies, tomatoes, pour the sauce into the meat mixture.
4. Stir for about another 1 minute.
5. Turn off the heat then add the basil leaves and stir well to coat until the basil begins wilt.
6. Taste and adjust the seasoning, immediately remove from the wok and garnish with fresh basil. Serve hot with steamed white rice.
